It's Already 2011!?

I can't believe it's 2011 already! Just as we did to ring in 2010, we had a small get together with our neighbors. I was short on time, but I wanted to make some kind of treat for the evening. I had a simple idea in my head. When I think of New Year's, I think of champagne, and when I think of what goes with champagne, for me I think of strawberries! So I whipped up some strawberry cupcakes, with champagne frosting. Oh my goodness! These were so yummy! The frosting was awesome. I'll admit the decorations aren't much to look at, but being short on time I was focused on just making something yummy more so than pretty!!

M-I-C-K-E-Y MOUSE!!

For my son's second birthday, we decided to do all things MICKEY MOUSE!!! My husband and I designed the cake based on differnet designs we found off the internet. But, what ended up being my favorite treat from the party were the party favors. My mom and I took on the project of making a ton of these precious Mickey Mouse cookies. I hope you enjoy looking at them, because they were so fun to make and I got rave reviews on how yummy they tasted!

Super Bowl Mania!!

With the Saints going to the Super Bowl, all my New Orleans friends were so excited. I was asked to do some Super Bowl cupcakes for a friend at work. These were so much fun. I can't remember the cake flavor, as I am very late in posting this, but buttercream icing was on top, and a custom, handmade fondant topping is on top.

A Baby Shower

One of the sweet ladies I work with is having a baby boy! Mom and Dad both love sports, so a couple ladies from work threw her a sports themed baby shower! I was on tap for the cupcakes and cookies. I thought baseballs would be cute. They were a big hit at the shower. I did one dozen chocolate cupcakes, one dozen vanilla cupcakes, and then a dozen chocolate sugar cookies.

My Wonderful Mom's Birthday Cake

My mom is a special lady. She's one of the most kind people I know, and is so loving and caring for my family. For her birthday, she needed a cake that was special. So through the Bakerella website, I found not just any cake, but a FOURTEEN layer cake. Yes, FOURTEEN layers!! It was quite the undertaking to bake this, but so worth it. I didn't even tell her how many layers it was so it was a fun surprise when she cut into it!

Homemade Marshmallows....REALLY!?

I was soo imtimidated by the thought of making homemade marshmallows, but yet the idea was so tempting. So, I went out and bought a digital candy thermometer (because I have never had luck with an old regular thermometer) and one cold Thursday night decided to give it a try. Boy, was I glad. The marshmallows were, for the most part, very easy to make and absolutely delicious. Way better than store bought. We ate them plain, put them in coffee, and then finally put them in hot cocoa....oh my goodness was that heaven. I knew they were good, but once they got into the hot cocoa I just can't tell you how good they were! I highly recommend making this tastey treat if you're up for the challenge!
