Homemade Marshmallows....REALLY!?

I was soo imtimidated by the thought of making homemade marshmallows, but yet the idea was so tempting. So, I went out and bought a digital candy thermometer (because I have never had luck with an old regular thermometer) and one cold Thursday night decided to give it a try. Boy, was I glad. The marshmallows were, for the most part, very easy to make and absolutely delicious. Way better than store bought. We ate them plain, put them in coffee, and then finally put them in hot cocoa....oh my goodness was that heaven. I knew they were good, but once they got into the hot cocoa I just can't tell you how good they were! I highly recommend making this tastey treat if you're up for the challenge!

Happy Birthday to my Hubby!

My husband turned 29 this year. That's right, just one more year til the big
3-0!! I told him he could pick out any cake he wanted. Well, he picked a cookie cake. Something I'd never made before. Geeez, thanks, Mike! Well, maybe I shouldn't be so sarcastic because it was actually quite fun to make! I made him a big snickerdoodle cake that tasted soo yummy. I got the recipe off of Bakerella's blog. I've made the cookies at least 5 times before, just never if the form of one giant one. It turned out so great, I had to make a second because the first one was gone before our family could eat it. I think we'll definitely be making more cookies cakes in the future for celebrations...easy, fun, and yummy...I think we found a winner!

Holiday Cupcakes

We recently had a holiday party at my office. I wanted to bring something super festive. I came across these cupcake designs on the Internet and gave them a try. They were vanilla cupcakes with buttercream frosting. Almost too cute to eat!

Holiday Cookies

I recently took a couple of cookies decorating classes. I did a royal icing class, and then a fondant class. The fondant is SO much fun to work with. You can do so much with it, and it looks so clean and neat. Below are a couple of different designs I played around with at the class!!

Spooktacular Cupcakes!

I had so much fun making the BOO! cake for Braden's fall festival, that I decided to make 50 of them, cupcake style! Of course, about half way through, I thought, WHY did I make 50 of these! My hand hurt pretty bad the next day, but it was worth it. They turned out really cute! They were pumpkin spice cupcakes with cream cheese icing. We gave a few to Braden's teachers and the front desk and I'm still trying to give the rest away. 50 is alot of cupcakes to give away!

A Spooktacular Site!

When Braden's daycare emailed all the parents soliciting for parents to make cakes for the cake walk at his Fall Fling, I immediately got so excited and signed up right away! I decided to make a banana cake, with creamy cream cheese icing. I've tested the cake on family and friends and they have all loved it, so that is why I chose that particular cake. But, I not only wanted it to taste great, but look wonderful. After looking up ideas on the Internet, I found the perfect cake design. I had so much fun making this cake. I hope you enjoy it!

Braden's Cake

My finest cake accomplishment to date, has got to be this one below. It is Braden's first birthday cake! This is what I took all of the cake decorating classes for...to make Braden's first birthday cake. It is a homemade vanilla cake with homemade strawberry cream filling and buttercream icing. It was sooo good! For Braden's smashcake, I chose a "baby friendly" pumpkin apple harvest cake with fresh whipped cream on top. I also decided for anyone that wanted chocolate, that I would make Devil's Food Cake cupcakes, with buttercream icing. The cake was definitely the biggest hit. Enjoy the pictures below!

Cake Classes

As I mentioned in my first blog, I have been taking cake decorating classes at a local cake supply company. I have taken Course 1 and Course 2 and they have been so much fun. I've been lucky enough to take them with my mom too, so it's been double the fun! I've learned proper icing of the cake, many different borders, and piping techniques, and lots of flowers. I think my favorite so far is the basket weave. I've also learned to work with royal icing, which is so much fun. Just wanted to post some of the fun we've had with the cakes!

Starting a Journey!

Hi! My name is Katie and over the years I've developed a love for all things baking. Some of my life-long friends find this funny, as years ago and through my teens I literally could not boil water. However, as I'm now well into my twenties, I've developed what some might consider an obsession with baking. I like to bake anything and absolutely love trying new recipes. My most recent goal has been to bake and decorate my son's first birthday cake. In preparation to obtain this goal, I've begun taking cake decorating classes and a local cake supply store. It's been so much fun and a great learning experience for me. This blog will serve as a fun way to chronicle my learnings and creations! Hoping to have some fun creations to post soon!
